With a background in biochemistry, a love of fine spirits and cooking, and a passiong for the West, David Perkins decided to leave his job and start a distillery to make a western whiskey. In 2007, after navigating Utah's complex licensing process, David opened High West Distillery-the first, legal distillery in utah since the 1870;s. Since then, High West's spirits have won top accolades and national recognition. High West distillery uses Traditional methods with western history.
